Banner Road is straight as an arrow between State Highway 152 and Interstate 40 in west-central Oklahoma. It wasn’t always paved and small family farms have shared its borders since I can remember. One of those was our family farm and it consisted of fields of ripening grain, a small herd of livestock, vegetable gardens and a fruit orchard. These fed the extended family.
As a child, I spent summers there with my aunts and uncle. In hindsight, I was observing a mosaic of interlocking efforts to bring food to market and to our table. Whether watching my uncle seed and harvest fields with oats and maize or helping my aunt assemble rustic tarts with fruits from the orchard, these things became the foundation for the love affair I have with food today. Step outside and put some seeds in the soil. Grow something to eat. It enlarges and expands the meaning of food and the pleasure of eating.
Becoming a chef was not as linear as Banner Road. My fine art studies in college were coupled with working in the restaurant industry and my break with academia led to a career as an Art Director in the Furniture & Design industry. The work was highly creative and I enjoyed it, but as time passed, I found myself thinking more about food than the tasks at hand. I knew a change was eminent. It seemed only logical that I would reconnect with the sense of excitement that drove me to cooking in the first place.
Aside from crafting the world’s best granola, I’ve worked as the Executive Pastry Chef for Gerard Craft’s Pastaria Restaurant in St. Louis, MO. There, I developed their signature gelato program and crafted classic Italian desserts. While fascinating and rewarding, the experience allowed me to fine tune my goals, expand on my love of whole grains and delve into my obsession with granola.
